If you have, in another application, your graph displayed on the screen, you can either copy the graph (using whatever copy options the program supplies) or copy the complete window (using Alt+Print Screen) to the clipboard as an image.
You can then start a new document in ScanIt by selecting New from clipboard from the File menu.
Next you will need to set the axes.
